In the past 20 years, since the Celiac diagnosis of her son and then the rest of the family, herself,husband, 3 sons and 6 grandchildren, Christy has become an expert on Celiac and gluten intolerance. Through trial and error, lots of experience and some great talent she has become a great cook of gluten free.
Christy has found through the years of research and many meetings of the many with gluten intolerance that Celiac/gluten intolerance is not rare, the diagnosis is.
Christy made it a mission in her life to provide her family with good gluten free eating and bring them all to complete wellness. God made it a mission for her to educate and provide gluten freedom for all.
With cookbooks, cooking demonstrations, speaking engagements and as a 'blogger, Christy hopes to make the world gluten free.
In addition to living and cooking gluten free, Christy enjoys the country life in Midland Texas. She lives in a home she and her husband built together near her three sons and their families. She loves on her dogs and cats, and paints murals and blogs on delete wheat.com as her husband, Keith works to keep the lights on.
Christy is blessed beyond even her understanding.
